Tasty Thursdays: Coconut Custard Pie

My mom likes to buy coconut custard pie from time to time, and lately it's been one of my guilty pleasures! I chose this recipe from AllRecipes.

Ingredients:
  • 1/2 cup butter
  • 1 1/2 cups white sugar
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1 cup flaked coconut
  • 1 teaspoon vanilla extract
  • 1 recipe pastry for a 9 inch single crust pie
  • 1 tablespoon flaked coconut
To Make: 1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, beat together butter or margarine, sugar, and eggs with an electric mixer on low speed. Blend in flour. Mix in 1/2 cup of milk at a time. Add 1 cup coconut and vanilla, and mix well.
3. Pour filling into unbaked pie shell. Sprinkle top with additional coconut before baking, just enough to lightly cover the top. Bake for 40 to 50 minutes, or until set.

ok. i'm telling you, my mouth is literally watering. sadly, my husband doesn't like coconut. so i would have to eat the entire thing by myself. hmm... did i say "sadly"?

Yum I just LOVE coconut custard pie. Nothing would be better than a piece of that today. I'm snowed in and just wish that I had all the ingredients so I could bake it.

If cocnut custard can do it so can I..it seems like the perfect recepie to heel the fact that my mom and grandmother left for Sweden yesterday, forcing me to cope in NZ all by myself, well..my husband is keeping me company but I can't help missing their laughs, the magic of shopping with my mom and just being blissful and excited about waking up..jeez..I am down, better take that recepie and bake away, that migh bring a smile to my face, either that or some random clothes bargains..Big Hugs and have a lovely weekend! xoxox Alice
