Tasty Thursdays: Piña Coladas!

Welcome to my new feature series, Tasty Thursdays. In the future, I will branch out to food recipes such as dinners, lunches, breakfast, dessert, etc. However, because summer is here - I'm going to start with mostly drink recipes - smoothies, cocktails, mocktails, juices, etc. And I definitely plan on actually making most of them! So I start this series with one of my favorites, piña coladas!

For the virgin piña colada, all you need is 1 cup pineapple juice, 1 cup crushed pineapple, 1/2 cup coconut milk - canned or fresh, juice from 1 lime, and lots of ice. (This serves about 3 people, depending how much each want to drink). Blend all ingredients together until the ice is slushy.

For the regular piña colada, all you have to do is add light rum. Also, instead of using coconut milk, you can use coconut cream. Of course, you can always garnish with a slice of pineapple, cherry, and a cute, little umbrella ;)

Below is what I made. No crazy straw, no extra slice of pineapple, no umbrella, but tastes just as great!Enjoy!

*sigh* A Pina Colada is not the same unless it's being sipped poolside!
